Two handfuls of macaroni noodles
Rocket1 apple, diced into 14-inch pieces.
Parmesan cheese, 1-2 tablespoons
Salt and pepper
Lemon juice – 1-2 tablespoons
Spring onions
Olive oil one tablespoon
OPTIONAL:
Mayonnaise, 1onetablespoon
Two tablespoons of bacon or pancetta
METHOD:
Cook pasta for 10-12 minutes in salted hot water.
While your pasta is boiling, chop your spring onions and apples finely.
In a large pan, heat some oil and add the spring onions and garlic. Cook for 4 minutes or until they are soft.
Add the apple, onion, rocket, and a splash of olive oil to your pasta. Season with salt, pepper, and lemon juice. Add the pancetta, parmesan, and mayo to the pasta and mix it together.
Serve in bowls and sprinkle with more parmesan cheese and cracked black pepper.
